Waste Food in Jyväskylä

We throw up to 30kg of food to the garbage per year. Let’s eat all the food away! We are opening a street food restaurant on the walking street of Are square in Jyväskylä. We offer real Waste Food, served by a top chef, for free.
 
The chef  was Sami Sorvoja. Sami is a 29-year old chef from Jyväskylä, who currently works in the restaurant Pöllövaari. Before Pöllövaari Sami has worked in several restaurants in Jyväskylä and been successful in the chef of the year-competition for example.
 
The ingredients were donations from the shopkeepers of the area. Let’s eat the food or it gets thrown away. Welcome with your friends! The restaurant will be open as long as there’s food left.
 
Waste Food food restaurant was part of an event, that starts the cooperation project of the city of Jyväskylä and Sitra, Towards resource wisdom. The aim of the project is to develop Jyväskylä area into a pioneer of resource knowledge and find ways to improve the economic growth, social wellbeing and ecological sustainability in the Jyväskylä area. When the material- and energy efiiciency improve, emissions decline and self sufficiency grows.
 
Participants from different areas of Jyväskylä, from companies to NGOs cooperate in the project. The undertaking proceeds through experiments, improvement of business and a control model for flows of resources. Our aim is to create practices that conserve the natural resources and improve sustainable ways of life. And also to make use of the experiences of Jyväskylä in other parts of Finland and possibly internationally.
